Heritage Breed Pork

Heritage Breed pork has become a rare occurence in modern day grocery stores. Our Canadian food system seems to prefer a way of producing pork that takes a lot less time, has less flavour, and, as a consequence, is a lot cheaper. It also does not taste like pork. This type of pork, the commercial breeds, have been defined over the years as the other white meat. They are the typical pig you would see in a farm setting.

At The Piggy Market, we use only Heritage Breed Pork. A Heritage Breed by definition is a breed of animal whose existence has become endangered because it does not live up to the ideals of less time and less money. Our Heritage Breeds live a peaceful existence on their farms (all local), sometimes for as much as a year. Currently at The Piggy Market, we have two breed of pork:

The Tamworth: This is an old english breed, and is most closely related to a wild boar. It is also known as the bacon pig, as it does not gain much body fat, making for very lean bacon. Our Tamworths come from Aartje den Boer at The Pickle Patch, in Dalkieth, Ontario. They are currently being fed the spent grains from Beau's Brewery, and the whey leftovers from Glengarry Cheesemaking.

The Large Black: Another english breed, distinguished in the late 1800's. The large black makes a very flavourful pork, with almost a creamy texture sometimes. Our Large Blacks are being raised by Barbara Schaefer at Upper Canada Heritage Meat, in North Augusta, Ontario.
